Struffoli (Italian Honey Cookies) Recipe

Ingredients

  • 3 lrg Large eggs
  • 1 Tbsp. Butter
  • 1 tsp Plus 1/2 c. sugar
  • 2 c. Unbleached sifted all purpose flour
  • 1/2 tsp Baking pwdr
  • 1 c. Honey
  •     Flour for dusting
  •     Oil for frying
  •     Colord sprinles

Directions

  1. Here is the recipe,unfortunately not TNT, but from one of my favorite cookbooks: "Ciao Italia" by Mary Ann Sposito
  2. In a bowl,whisk together the Large eggs,butter,and 1 t sugar till foamy. Sift the flour with the baking pwdr and stir into the egg mix.With your hands work the mix into a soft douhg. Divide the dough into 4 pcs.
  3. On a floured surface,roll ea piece into a rope about the width of your index finger and 12" long. Cut the ropes into 1" pcs.
  4. Toss the pcs with sufficient flor to dust them lightly, and shake off the exces flour.
  5. In a deep fryer, heat the oil to 375 . Fry the struffoli a few handfulls at atime, till puffed up and golden.
  6. Tranfer with a slotted spoon to brown paper to drain.
  7. In a large saucepan, combine the honey and the 1/2 c. sugar and heat over low heat, stirring till the sugar is dissolved,Keep hot over low heat.
  8. Add in the fried balls a little at a time, and turn them to coat all sides.
  9. Transfer them to a large plate and mound them into a pyramid shaping it with wet hands.
  10. Sprinkle with the colored sprinkles and let stand 1 to 2 hrs. Break pcs with your hand to eat.
