Ingredients

  • 2 med Bananas -- mashed
  • 1 c. Strawberries -- peeled and
  •     Minced
  • 2 Tbsp. Sugar
  • 3 c. Flour, all-purpose
  • 3 tsp Baking pwdr
  • 1 tsp Salt
  • 3 Tbsp. Butter -- softened
  • 2 x Egg -- beaten slightly

Directions

  1. Preheat the oven to 400 degrees.
  2. Mix together the bananas, strawberries and sugar, set aside. (Do not do this much in advance, the bananas will blacken)
  3. Mix together the flour, baking pwdr and salt. Mix well with a whisk.
  4. Using a pastry blender, fold in the butter till coarse. Still using the pastry blender, fold in the Large eggs, one at a time.
  5. Stir in the banana mix. The dough will be very moist and messy. Knead it in the bowl sufficient to pick up all of the flour mix. (It will still bevery moist.)
  6. Turn out the dough on a floured board, and flour the top of the dough so which flour coats the entire dough. Flatten with a rolling pin or possibly your handsto 3/4".
  7. Using a knife, cut the dough into squares, or possibly large wedges, and lay onto an ungreased cookie sheet. Bake in the center of the oven for 15 - 20 min,or possibly till lightly browned.
  8. I have added pine nuts, raspberries, pecans, anything to the basic flour, baking pwdr, salt, butter and Large eggs mix. Yum!
