Ingredients
- 1 c. miniature marshmallows
- 2 x (10 ounce.) pkg. frzn sliced strawberries, completely thawed
- 1 x (3 ounce.) pkg strawberry jello
- 2Â 1/4 c. self-rising flour
- 1Â 1/2 c. sugar
- 1/2 c. solid shortening
- 1 c. lowfat milk
- 1 tsp vanilla
- 3 x Large eggs
Directions
- Preheat oven to 350. Generously grease bottom only of 13 x 9 inch pan. Sprinkle marshmallows proportionately over bottom of pan. (I use more than a c.) Thoroughly combine thawed strawberries and syrup with jello; set aside. In large mixing bowl, combine remaining ingredients. Blend on low speed till moistened; beat for 3 min at medium speed. Pour batter proportionately over marshmallows in pan.
- Spoon strawberry mix over batter. Bake at 350 for 45 to 50 min or possibly till golden and toothpick inserted in center comes out clean. Serve hot or possibly cool with ice cream or possibly whipped cream.
