This is a base recipe for what ever addition strikes your fancy. I used strawberry and coconut but you might like a savory loaf, say pancetta and bluecheese?
Makes 3 mini loaves, 3 x 5" pans
Ingredients
- â 2 2/3 cups flour
- â 1/2 cup oats
- â 1 tsp baking powder
- â 1 tsp baking soda
- â 1/2 tsp salt
- â 1 1/3 cup brown sugar
- â 1 cup low fat buttermilk
- â 1/2 cup canola oil
- â 1 egg
- â 1 tsp vanilla
Directions
- Preheat oven to 350 F .
- Spray the pans with non stick.
- Mix together the first 5 ingredients from flour thru salt.
- Whip together the sugar, milk, oil,egg and vanilla.
- Blend the dry mix (flour, etc) into the wet mix (buttermilk, etc.) BUT JUST UNTIL INCORPORATED. Donât over mix.
- Stir in your choice of flavor. I added 1 cup of chopped, fresh strawberries and 1/2 cup coconut.
- Pour into greased pans and bake for 45 â 55 minutes or until a knife inserted in the middle comes clean.
