Strawberry Jicama Salsa

This is the result of trying to use leftover ingredients from other recipes. What I had on hand resulted in a different salsa that I used with grilled Mojo chicken breasts and baked plantains. It is quick and easy to make. Refrigerate for a couple of hours so the flavors can meld.

Ingredients

  • 1 oz red onion, minced
  • 2 Tbs fresh lime juice
  • 3 oz peeled, diced jicama
  • 6 oz avocado (1 large) diced
  • 9 oz fresh strawberries, cleaned and diced
  • 1/2 tsp ground pasilla pepper
  • 1 ea jalapeno pepper, minced (or more to taste)
  • 3/4 cup minced cilantro
  • salt/garlic pepper to taste

Directions

  1. Combine all the salsa ingredients except the avocado and chill covered for a couple hours so the flavors can meld. Combine the diced avocado just before serving.
