  • 1 1/2 c. stone-grnd cornmeal
  • 1/2 c. flour
  • 1 tsp sugar
  • 2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1 tsp cumin
  • 1 1/4 c. skim lowfat milk
  • 1/4 c. unsweetened applesauce
  •     Egg substitute equal to 2 Large eggs
  • 1/2 c. fresh or possibly frzn corn
  • 1/3 c. minced onion
  • 1/3 c. minced green chili
  •     cooking spray

Directions

  1. Heat oven to 400 degrees. Spray bottoms of muffin pan with nonstick spray. Measure cornmeal, flour, sugar, baking pwdr, baking soda and cumin into a large bowl; mix together.
  2. In a separate bowl, combine the skim lowfat milk, margarine, egg substitute, corn, onion and green chilis. Pour egg mix into dry ingredients. Stir only till flour is moistened (batter will be lumpy).
  3. Fill (sprayed) muffin c. about 3/4 full. Bake till golden (about 15 to 20 min).
  4. This recipe yields 12 muffins.
  5. Comments: Serve with fresh minced tomatoes and cilantro, or possibly salsa for a different spread. These toppings add in few calories.
