2 bunches baby carrots, peeled
olive oil
sea salt & freshly ground pepper
a good squirt of honey (or 1 heaped tbsp)
2 tbsp chopped fresh parsley

Directions

Preheat oven to 180Â°C fan forced (200Â° C normal).
Toss the carrots in a little oil and seasonings in a large baking tray. Cook in the oven for about 15 mins until reasonably tender, tossing now and again.
Then toss the carrots with the honey and parsley. Cook for another 5-10 mins until well glazed.
