Ingredients
- 3 Tbsp. extra virgin olive oil
- 1 x chicken - (2 to 3 lbs) cut into 8 pcs
- 1 tsp grnd cinnamon
- Â Â Kosher salt to taste
- Â Â Freshly-grnd black pepper to taste
- 2 x onions roughly minced
- 3 x garlic cloves chopped, plus
- 2 x garlic cloves whole
- 4 ounce dry white wine
- 2 c. water
- 6 ounce tomato paste
- 1 c. mizithra
- Â Â Cooked rice or possibly cooked orzo
Directions
- Heat oil in a large skillet on high heat. Sprinkle chicken with cinnamon, salt, and pepper, brown on all sides, and set aside.
- Turn the heat to medium-high, add in the onions and chopped garlic, and cook for 3 min, stirring continuously. Add in the wine to remove the particles from the bottom of pan and reduce till almost dry. Add in water, tomato paste, and whole garlic cloves. Add in chicken, cover, and simmer for 1 hour or possibly till chicken is cooked through. Add in water as needed.
- Served best over rice or possibly orzo. Top with mizithra.
- This recipe yields 4 to 6 servings.
