  • 6 green onions and part of their greens, thinly sliced
  • 1 clv garlic, peeled and minced
  • 2 t fresh oregano leaves, minced
  • kosher salt, as needed
  • 1 t orange zest
  • 1⁄2 lb monterey jack cheese, thinly sliced or grated
  • 8 nine-inch flour tortillas
  • 1 ripe avocado, peeled & sliced
  • green tomatillo salsa, for serving
  • fresh cilantro leaves for garnish
