  • Spring onion greens, finely chopped 1 cup
  • Onion, finely chopped 1/2 small
  • Garlic, finely chopped 1 clove
  • Finely grated fresh ginger 1/2 tsp
  • Finely diced orange pumpkin 3 tbsps
  • Freshly ground black pepper 1/4 tsp
  • for garnish:
  • Spring onion juliennes 2-3
  • Extra virgin olive oil 1/2 tsp
  • to serve:
  • Slice whole wheat bread 1
