Ingredients
- Maida / All purpose flour - 300 grams
- Sugar - 300 grams (granulated)
- Eggs - 3 (At room temperature)
- Milk - 200 ml
- Butter - 75 grams
- Oil - 40 ml (optional)
- Baking powder - 1 teaspoon
- Baking soda - 1/2 teaspoon
- For Buttercream frosting
- Unsalted butter - 200 grams (At room temperature)
- Icing Sugar - 300 to 450 grams
- Rose essence / Vanilla essence - 1.5 teaspoon
- Sieve or mix flour, baking powder, baking soda and set aside. (you can add a small pinch of salt it will enhance the sweetness)

%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EMakes%20a%201.5%20kg%20cake%3C/p%3E%3Cp%3EPreparation%20Time%20-%2020%20minutes%3C/p%3E%3Cp%3EBaking%20time%20-%2045%20to%2060%20minutes%20(depends%20on%20the%20size%20of%20you%20pans)%3C/p%3E%3Cp%3EPREPARATION%20METHOD%3C/p%3E%3Cp%3EBaking%20the%20cake%3C/p%3E%3Cp%3EPreheat%20an%20oven%20to%20160%20degree%20Celsius%20for%2010%20minutes.%20Grease%20a%20pan%20(10%20inch%20or%208%20inch%20pan)%20with%20butter%20on%20the%20inside%20and%20line%20with%20butter%20paper%20or%20parchment%20paper%20(i.e.%20place%20a%20piece%20of%20butter%20at%20the%20pan's%20bottom)%3C/p%3E%3Cp%3ETo%20a%20pan%20add%20milk%20and%20butter%20and%20place%20on%20flame,%20wait%20until%20butter%20melts%20set%20this%20aside%20until%20it%20cools%20down.%20Then%20add%20oil%20and%20mix%20well.%20(You%20can%20skip%20addition%20of%20oil,%20but%20it%20makes%20the%20cake%20moist)%3C/p%3E%3Cp%3ESieve%20or%20mix%20flour,%20baking%20powder,%20baking%20soda%20and%20set%20aside.%20(you%20can%20add%20a%20small%20pinch%20of%20salt%20it%20will%20enhance%20the%20sweetness)%3C/p%3E%3Cp%3EBreak%20open%20eggs%20and%20beat%20really%20well%20in%20a%20bowl%20until%20light%20fluffy%20and%20pale.%20Incorporating%20more%20air%20will%20give%20you%20the%20spongy%20and%20airy%20texture,%20so%20beat%20well.%3C/p%3E%3Cp%3EThen%20add%20in%20vanilla%20or%20rose%20essence%20and%20beat%20the%20eggs%20for%20a%20minute%20more%20and%20set%20aside.%3C/p%3E%3Cp%3ENow%20add%20the%20flour%20mix%20to%20the%20beaten%20eggs%20little%20by%20little%20and%20fold%20in%20or%20stir%20with%20a%20whisk%20or%20spatula,%20if%20you%20dump%20it%20all%20at%20the%20same%20time%20it%20will%20form%20lumps.%20Be%20careful%20not%20to%20over%20stir.%3C/p%3E%3Cp%3EThen%20add%20the%20'milk+butter+oil'%20mixture%20and%20stir%20gently.%3C/p%3E%3Cp%3ENow%20pour%20the%20batter%20into%20the%20greased%20&lined%20cake%20pan%20and%20bake%20in%20the%20preheated%20oven%20for%2045%20to%2060%20minutes.%20(After%2040%20minutes%20insert%20a%20wet%20knife%20or%20a%20toothpick%20in%20the%20center%20of%20the%20cake,%20if%20it%20comes%20out%20clean%20it%20means%20your%20cake%20is%20done.%20If%20not%20bake%20for%20a%20few%20more%20minutes)%3C/p%3E%3Cp%3ERemove%20the%20pan%20from%20oven%20and%20set%20aside%20until%20the%20cools%20down%20to%20a%20bearable%20temperature.%20Then%20slide%20a%20knife%20around%20the%20cake%20and%20invert%20the%20pan%20slowly%20and%20cautiously%20to%20remove%20the%20cake.%20Place%20on%20a%20wire%20rack%20and%20let%20the%20cake%20cool%20down%20well%20before%20frosting.%3C/p%3E%3Cp%3EFrosting%20the%20cake%20with%20buttercream%3C/p%3E%3Cp%3ETake%20room%20temperature%20butter%20and%20beat%20well%20until%20it%20turns%20a%20little%20fluffy.%20Add%20icing%20sugar%20little%20by%20little%20and%20continue%20beating%20until%20you%20get%20thick%20buttercream%20that%20has%20piping%20consistency.%20Sometimes%20just%20300%20grams%20icing%20sugar%20will%20be%20enough,%20and%20sometimes%20you%20will%20need%20even%20more.%20See%20that%20your%20butter%20has%20not%20softened%20too%20much,%20it%20should%20not%20be%20cold%20but%20has%20to%20be%20soft%20at%20the%20same%20time.%20If%20your%20butter%20is%20too%20soft%20you%20will%20have%20to%20add%20too%20much%20of%20icing%20sugar.%20Add%20rose%20essence%20and%20colors%20and%20beat%20again%20until%20well%20incorporated.%20Put%20them%20into%20piping%20bags%20fitted%20with%20nozzle.%20Frost%20and%20pipe%20designs%20as%20you%20wish.%3C/p%3E%3Cp%3ETIP%201:%20Adding%20oil%20makes%20the%20cake%20moist%20and%20keeps%20it%20soft%20and%20moist%20for%20long,%20but%20you%20can%20skip%20oil%20and%20use%20butter%20alone.%3C/p%3E%3Cp%3ETIP%202:%20Reduce%20sugar%20to%20250%20grams%20if%20you%20do%20not%20want%20the%20cake%20to%20be%20very%20sweet.%3C/p%3E%3Cp%3ETIP%203:%20You%20can%20also%20make%20it%20more%20airy%20and%20fluffier%20by%20beating%20egg%20whites%20separately%20until%20it%20multiplies%20in%20quantity%20and%20forms%20stiff%20peaks%20and%20add%20it%20to%20the%20batter%20finally.%20But%20while%20adding%20be%20very%20cautious%20not%20to%20pop%20all%20the%20air%20bubbles%20that%20you%20have%20got%20on%20beating%20the%20egg%20whites.%3C/p%3E%3Cp%3ETIP%204:%20While%20adding%20four%20to%20the%20beaten%20egg%20mixture%20be%20careful%20not%20to%20over%20mix%20as%20it%20will%20not%20let%20the%20cake%20rise%20well.%3C/p%3E%3Cp%3ETIP%205:%20Use%20any%20of%20the%20following%20essence%20to%20make%20a%20basic%20sponge%20cake;%20Vanilla%20essence,%20pineapple%20essence%20or%20rose%20essence.%20In%20most%20bakeries%20of%20South%20India%20Pineapple%20essence%20is%20most%20commonly%20used%20and%20rose%20essence%20is%20the%20next%20frequently%20used%20flavoring%20in%20most%20sponge%20cakes%20and%20bakes.%3C/p%3E){kind=link}
