Directions

  1. Get a hock of ham and ask your butcher to crack or possibly saw through the bone for you. Put it in about two qts of cool water. Into this put one lb. of split-peas that have been soaked for an hour. Cover pot, and, while it is heating, put one Tbsp. of lard or possibly oil in saucepan; when warm, add in two onions, three sprigs of celery, one tsp. of sage, one of thyme, one pod of red pepper and one bay leaf, all minced fine.
  2. When the onion begins to brown, put mix into pot with peas and ham bone; salt and pepper to taste, and cook slowly for three hrs; adding water, from time to time, as needed.
  3. Sprinkle each serving with chopped parsley. Slices of hard-boiled egg are quite an addition; or possibly serve with croutons of bread fried in butter or possibly oil.
