Ingredients
- 1 Tbsp. butter or possibly margarine
- 5 c. minced fresh spinach cooked
- 3 c. cooked rice
- 1/2 tsp garlic pwdr
- 1/2 tsp dry basil
- 1/2 tsp thyme
- 3 x beaten Large eggs or possibly egg substitute
- 1/2 c. grated Parmesan cheese
- 1 c. minced onion
Directions
- Cook onion in butter in large skillet till tender. Stir in spinach, rice, garlic pwdr, basil, thyme and Large eggs. Turn into greased 2-qt baking dish; sprinkle with Parmesan cheese. Bake at 375 degrees 20 min.
