Spinach, Ham, Avocado Salad, Thousand Island Dressing; golf?!? Recipe

Ingredients

  • 8oz (240gr) ham, cut into pieces
  • 1 avocado, sliced, slices cut in half
  • 2oz (60gr) cheddar or other cheese, cut into cubes
  • 4 small tomatoes, quartered
  • 1/2 red bell pepper, roughly chopped
  • 1 onion, roughly chopped
  • 2 tsp olive oil
  • enough greens for 2 main dish salads, I used spinach and red leaf
  • 3 tbs fresh oregano leaves, pulled off stems or any other fresh herbs
  • Thousand Island Dressing:
  • 4 tbs Greek yogurt
  • 2 tbs ketchup
  • 2 tbs mayonnaise
  • 1 tsp Dijon-style mustard
