Ingredients: 1 box Jiffy corn muffin mix; 1 c. cornmeal mix; 1 pkg. frzn minced spinach, thawed and liquid removed; 5 large eggs, well beaten; 1 lg. minced onion; 6 ounce lg. curd cottage cheese; 1/2 teaspoon salt; 1/2 stick melted butter

Directions

Mix all ingredients and bake in 9 x 13 inch pan at 400 degrees for 25 to 30 min.
