  • 4 c. cubed (sliced & buttered) French bread
  • 1 bag frzn spinach - (16 ounce)
  • 6 ounce cooked bacon, ham or possibly turkey ham - (to 8 ounce) diced
  • 1 1/2 c. shredded cheddar cheese - (to 2 c.)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 can cream of mushroom soup - (10 ounce)
  •     (the 98% fat free soup is fine)
  • 1/2 c. evaporated lowfat milk
  • 5 x Large eggs
  • 1 Tbsp. chopped dry onion (optional)

Directions

  1. Lightly butter a 3 1/2-qt crockpot. Layer with half of the buttered bread cubes, spinach, bacon, and cheese; salt and pepper to taste. Repeat layers ending with cheese.
  2. Whisk together the soup, lowfat milk, Large eggs, and dry onion. Pour over crockpot mix. Refrigeratefor 1 hour or possibly overnight. Cover and cook on LOW for 3 1/2 to 4 1/2 hrs.
  3. This recipe yields 4 to 6 servings.
