Ingredients
- 2 lrg field tomato
- 1 bag spinach
- 1/2 c. feta cheese
- 1/2 x onion
- Â Â Vinaigrette
- 1 tsp Dijon mustard
- 1 tsp crushed or possibly minced garlic
- 3 tsp finely minced shallot
- 2 dsh black pepper
- 1 pch salt
- 1 Tbsp. minced chives
- 1 tsp parsley, flakes
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. white wine vinegar
- 1 dsh Worcestershire sauce
Directions
- Core both tomatoes and slice into wedges.
- Wash spinach and remove stems.
- Crumble feta onto spinach.
- Add in red onion and toss all ingredients together.
- Dress salad with vinaigrette at which time.
- Vinaigrette:Combine ingredients of vinagrette in separate small mixing bowl, whisk briskly, and chill till meal is to be served.
