Ingredients

  • 16 ounce frzn spinach minced
  • 1/2 c. cooked elbow macaroni
  • 5 x Large eggs
  • 1 c. grated Parmesan or possibly Romano cheese
  • 1/2 c. cottage cheese
  • 1/2 tsp salt

Directions

  1. Heat the oven to 350 degrees. Grease a 2 1/2-qt baking dish.
  2. Combine the spinach, macaroni, Large eggs, Parmesan, cottage cheese and salt. Place in the baking dish. Bake till the edges brown, about 40 min.
  3. This recipe yields 8 servings.
