Ingredients
- 2 oz onion
- 1 oz butter
- 4 oz spinach, chopped
- 6 fl oz milk
- 6 fl oz cream
- 4 oz eggs
- 2 oz egg yolks
- ½ tsp salt
- ½ tsp black pepper
- 3 oz feta cheese, cut into small cubes
Directions
- Roll out a pie crust in a tart or pie pan. Line the crust with parchment paper and fill with dry beans or pie weights. Bake the crust at 350 degrees until very lightly golden brown, about 15 minutes. Cool completely.
- Sauté the onion in the butter until translucent. Add the spinach and cook until wilted. Drain.
- Combine the milk and cream in a saucepan and bring to a simmer.
- Meanwhile, combine the eggs, egg yolks, salt and pepper in a bowl, stirring with a whisk. Add about one-third of the hot milk mixture to the eggs while whisking constantly. Add the remaining hot milk mixture, stirring to incorporate.
- Spread the spinach mixture in the tart shell and sprinkle the cheese on top. Pour the custard mixture over the top.
- Bake at 350 degrees and bake until the custard is set, about 45 minutes. Serve warm, at room temperature, or chilled.
