Ingredients: 1 lb fresh baby spinach leaves gently washed and patted dry; 1/3 c. lean cooked bacon, crumbled; 2 x hard boiled Large eggs, diced; 1/4 c. extra virgin olive oil; 1/4 c. red wine vinegar; 1 Tbsp. fresh lemon juice; 1/2 tsp sugar; Salt and pepper to taste

2 x hard boiled Large eggs, diced
1/4 c. extra virgin olive oil
1/4 c. red wine vinegar

Directions

Place spinach in a large serving bowl and sprinkle with bacon pcs and diced Large eggs. Combine remaining ingredients and shake well. Just before serving pour over salad and toss.
Chefs Notes: Use low fat turkey bacon.
