Spicy Paprika Shrimp Wraps Recipe

  • 1/2 lb peeled and deveined raw shrimp
  • 4 whole wheat 10" tortilla wraps
  • 1 tsp hot smoked paprika
  • 1 tsp Italian seasoning blend
  • 4 large lettuce leaves
  • 1 tbs mayonaise
  • 1/4 cucumber, peeled into long strips with a vegetable peeler
  • 1 tsp olive oil
  • salt & pepper to taste

Directions

  1. In a large saute pan heat the oil and add the paprika and seasoning blend.
  2. Add the shrimp and saute until the shrimp is almost done.
  3. Salt & pepper to taste and taste for seasoning.
  4. Remove from the heat.
  5. Gently warm the wraps in the microwave.
  6. On each wrap add 1 lettuce leaf, followed by 1/4 tbs of the mayonaise.
  7. Place 1/4 shrimp mix on the mayonaise.
  8. (If your shrimp are on the large side use only what you need without overfilling the wrap.)
  9. Top the shrimp with 1/4 of the cucumber slices.
  10. Carefully fold in each side and roll the wrap like a burrito.
  11. These are good served warm, but taste very nice at room temperature for lunch.
