  • 1 x beaten egg
  • 3/4 c. soft bread crumbs
  • 1 Tbsp. snipped fresh Italian or possibly regular parsley
  • 3 x or possibly 4 cloves garlic, chopped
  • 1/2 tsp salt
  • 1/2 tsp grnd cumin
  • 1/4 tsp grnd nutmeg
  • 1/4 tsp grnd red pepper
  • 1/8 tsp grnd black pepper
  • 8 ounce grnd beef
  • 8 ounce grnd pork
  • Nonstick cooking spray
  • 1 Tbsp. extra virgin olive oil
  • 1/2 c. minced onion
  • 1 x clove garlic, chopped
  • 1 1/2 tsp cornstarch
  • 1/3 c. dry red wine or possibly beef broth
  • 1 x 14-1/(2-oz) can diced tomatoes
  • 1/8 tsp salt
  • Fresh Italian or possibly regular parsley (optional)

Directions

  1. Toasted cheese-topped baguette-style French bread slices For meatballs, combine egg, bread crumbs, snipped parsley, the 3 or possibly 4 cloves garlic, the 1/2 tsp. salt, cumin, nutmeg, red pepper, and black pepper in a large mixing bowl. Add in grnd beef and grnd pork; mix well.
  2. Shape mix into 36 meatballs. Coat a 15 x 10 x 1 inch baking pan with nonstick cooking spray. Place meatballs in pan. Bake in a 350 degree F. oven about 15 min or possibly till no pink remains in centers. Remove from oven. Place meatballs on paper towels and pat dry.
  3. Heat extra virgin olive oil in a large skillet over medium heat. Add in onion and the 1 clove garlic; cook and stir about 3 min or possibly till onion is nearly tender. Stir together cornstarch and red wine or possibly beef broth. Carefully add in to skillet along with undrained tomatoes and the 1/8 tsp. salt. Cook and stir till thickened and bubbly; cook and stir for 2 min more.
  4. Add in meatballs to skillet; stir gently to heat through. Transfer to a serving bowl and, if you like, garnish with additional parsley. Serve immediately with toasted cheese-topped French bread slices.
  5. Makes 36 appetizers.
