Spiced Apple Cake With Guava Cream Cheese Topping Recipe

Ingredients

  • 2 x Large eggs
  • 1 c. Vegetable oil
  • 1/4 c. Freshly-squeezed orange juice
  • 2 c. White sugar
  • 2 c. All purpose flour
  • 4 tsp Grnd cinnamon
  • 1 tsp Salt
  • 2 tsp Baking soda
  • 4 x Granny Smith apples - (to 6), peeled, cored,
  •     And finely minced -, (abt 4 c.)
  • 1 c. Walnuts, coarsely minced
  •     GUAVA CREAM CHEESE TOPPING ===
  • 1/4 c. Guava jam
  • 5 ounce Cream cheese, room temperature
  • 1 Tbsp. Fresh lime juice

Directions

  1. Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip Large eggs till frothy, about 3 to 4 min then add in oil and orange juice and mix thoroughly. Add in dry ingredients and beat with whip at low speed till thoroughly combined. Mix in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or possibly till hard on top. Cover with aluminum foil if top gets too brown. Cold on rack 5 min, then invert onto rack and cold completely. Serve with Guava Cream Cheese topping spread over the top. Guava Cream Cheese Topping: Mash all ingredients in a bowl with fork till light and fluffy.
