Spanish Sardines Puttanesca Recipe

Another sardines and pasta recipe.

Ingredients

  • 400 grams spaghetti, cooked according to package directions
  • 1 head garlic, chopped
  • 1 medium onion, chopped
  • 50 grams bacon, sliced into strips
  • 1 bottle (250-gram) sardines in olive oil, drained (reserve oil)
  • 1 can (400-gram) button mushrooms, sliced
  • 500 grams Italian-style spaghetti sauce
  • 1/3 cup water
  • 26 grams (2 tablespoons) capers
  • 75 grams (1/2 cup) black pitted olives, sliced
  • salt and pepper to taste
  • 2 tablespoons snipped parsley

Directions

  1. Sauté garlic, onion, and bacon in sardine oil.
  2. Cook while stirring until bacon is brown.
  3. Add sardines, mushrooms, spaghetti sauce, water, capers, olives, salt and pepper. Simmer for 5 minutes.
  4. Add parsley. Pour over or mix with cooked spaghetti.
  5. Top with sardines, as desired.
