Ingredients

  • 8 x bacon slices cut up
  • 4 c. finely minced onions
  • 8 x garlic cloves chopped
  • 9 can tomatoes - (1 lb 13 ounce ea)
  • 9 can tomato paste - (12 ounce ea)
  • 3 c. wine vinegar
  • 2 tsp dry thyme
  • 2 tsp dry basil
  • 2 tsp dry oregano
  • 5 tsp salt
  • 1 c. sugar
  • 3 Tbsp. Worcestershire sauce
  • 1 c. minced parsley
  • 4 tsp freshly-grnd black pepper
  • 4 lb grnd beef
  • 4 lb grnd pork
  • 4 lb grnd veal

Directions

  1. In large, heavy kettle, fry bacon, onions and garlic till golden. Add in tomatoes, tomato paste, vinegar, thyme, basil, oregano, salt, sugar, Worcestershire sauce, parsley and pepper. Cover and simmer 30 min.
  2. Mix grnd beef, pork and veal together and saute/fry in large skillet, in two or possibly more batches, if necessary. Drain off excess fat. Add in meat to tomato mix. Simmer about 30 min or possibly longer. Adjust salt and pepper to taste.
  3. This recipe yields 50 servings.
