Soy Braised Beef Short Ribs (Asian Inspired Tacos)

There is a Mexican restaurant in New York City that serves some of the best short rib tacos I have EVER had. I say EVER here and I mean it. Having visited Mexico many times I would not use that term very lightly. Authentic tacos in Mexico are on a level all their own, but I am convinced magic is involved in making the short ribs at this restaurant. %3C/p%3E%3Cp%3EOctober%206,%202014%20By:%20Kathy%20Steger36%20Comments%3C/p%3E%3Cp%3EThere%20is%20a%20Mexican%20restaurant%20in%20New%20York%20City%20that%20serves%20some%20of%20the%20best%20short%20rib%20tacos%20I%20have%20EVER%20had.%20I%20say%20EVER%20here%20and%20I%20mean%20it.%20Having%20visited%20Mexico%20many%20times%20I%20would%20not%20use%20that%20term%20very%20lightly.%20Authentic%20tacos%20in%20Mexico%20are%20on%20a%20level%20all%20their%20own,%20but%20I%20am%20convinced%20magic%20is%20involved%20in%20making%20the%20short%20ribs%20at%20this%20restaurant.%20For%20a%20while%20now,%20I%E2%80%99ve%20been%20on%20a%20mission%20to%20create%20a%20recipe%20that%20could%20come%20close.%20Ta%20Da!%20I%20feel%20as%20if%20I%20am%20very%20close%20with%20this%20one.%20The%20braising%20liquid%20is%20super%20delicious%20and%20so%20sophisticated.%20%20When%20the%20ribs%20are%20done%20cooking%20you%E2%80%99ll%20feel%20like%20sticking%20a%20straw%20into%20the%20pot%20and%20drinking%20it.%20What%E2%80%99s%20not%20to%20love%20about%20soy%20sauce,%20ginger,%20shiitake%20mushrooms%20and%20sake%20marrying%20together%20for%20a%20few%20hours%20in%20the%20oven.%20Add%20some%20sake%20to%20the%20pot%20and%20warm%20up%20the%20rest%20for%20a%20good%20time.%20%20Love%20the%20stuff.%20Oh%20yeah,%20these%20short%20ribs%20freeze%20well%20for%20future%20enjoyment,%20so%20make%20a%20big%20batch%20and%20you%E2%80%99ll%20thank%20yourself%20another%20night.%3C/p%3E%3Cp%3EI%20found%20that%20spicy%20Sriracha%20and%20pickled%20jalape%C3%B1o%20slaw%20was%20just%20the%20right%20topping%20for%20these%20Asian%20inspired%20tacos.%20Shred%20some%20cabbage,%20add%20sliced%20pickled%20jalape%C3%B1os%20then%20stir%20in%20Sriracha%20and%20mayo%20mixture.%20Drooling!%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3ESoy%20Braised%20Beef%20Short%20Ribs%20(Asian%20Inspired%20Tacos)%3C/p%3E%3Cp%3ERating%20%20%20%20%205.0%20from%203%20reviews%3C/p%3E%3Cp%3EPrep%20time:%20%2015%20mins%3C/p%3E%3Cp%3ECook%20time:%20%202%20hours%3C/p%3E%3Cp%3ETotal%20time:%20%202%20hours%2015%20mins%20%20%20%20%20Recipe%20adopted%20from%20Bon%20Appetit%20%20%20Ingredients%3C/p%3E%3Cp%3E2%20tbsp%20canola%20oil%204%20lbs%20short%20ribs%20%C2%BD%20cup%20dry%20shiitake%20mushrooms%202%20scallions,%20sliced%202%20garlic%20cloves,%20minced%201%20tbsp%20fresh%20ginger,%20minced%201%C2%BD%20cups%20chicken%20stock%20%C2%BD%20cup%20organic%20low%20sodium%20soy%20sauce%20%E2%85%93%20cup%20sake%20salt%20and%20pepper%20%20%20Instructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%20Put%20dry%20shiitake%20mushrooms%20in%20a%20small%20bowl,%20top%20with%20hot%20water%20and%20cover%20with%20a%20plate.%20Let%20soak.%20Season%20short%20ribs%20generously%20with%20salt%20and%20pepper.%20Heat%20canola%20oil%20in%20a%20heavy%20pot%20or%20a%20Dutch%20oven.%20Brown%20ribs%20a%20few%20minutes%20on%20each%20side.%20Do%20not%20overcrowd%20the%20pot,%20you%20want%20to%20brown%20the%20ribs%20not%20steam%20them.%20Best%20is%20to%20brown%20them%20in%20batches%20of%20a%20few.%20Set%20the%20ribs%20aside.%20Drain%20most%20of%20the%20oil%20leaving%20about%201%20tbsp.%20Add%20ginger,%20garlic%20and%20scallions%20to%20the%20pot.%20Saute%20for%20a%20minute%20then%20add%20soy%20sauce,%20sake,%20stock%20and%20shiitake%20with%20their%20soaking%20liquid.%20Return%20the%20ribs%20back%20to%20the%20pot.%20Cover%20and%20braise%20in%20the%20oven%20for%20about%201%20hour.%20Turn%20the%20oven%20up%20to%20375%20degrees,%20uncover%20the%20pot%20and%20cook%20another%2030-45%20min%20until%20the%20meat%20falls%20apart.%20Shred%20and%20enjoy%20in%20tacos.%20%20%20Notes%20Another%20serving%20idea:%20Simmer%20the%20cooking%20liquid%20on%20the%20stove%20until%20reduced%20by%20half.%20Spoon%20over%20the%20noodles%20with%20ribs.%20%203.2.2807%3C/p%3E){kind=link}
