Ingredients

  • 2 Tbsp. minced fresh cilantro
  • 1 Tbsp. minced fresh thyme
  • 1 Tbsp. minced fresh basil
  • 1 x clove garlic, chopped
  • 2 x shallots, chopped
  • 1 Tbsp. dry white wine
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. balsamic vinegar
  • 1/2 c. extra virgin olive oil
  • 1/4 c. corn Oil
  •     Salt and freshly grnd pepper, to taste
  • 9 ounce fusilli or possibly penne
  •     Salt, to taste
  • 3 Tbsp. extra virgin olive oil
  • 1/2 c. canned black beans, liquid removed
  • 1/2 med red bell pepper, cut into 1/4" strips
  • 1/2 med yellow bell pepper, cut into 1/4" strips
  • 1 sm carrot, coarsely minced
  • 5 x tomatillos, cored and cut into
  • 1/4 x " cubes
  • 4 ounce mozzarella cheese, cut into 1/3" cubes
  • 8 ounce boneless smoked chicken breast, cut into 1/3" cubes
  • 1 c. oven-dry cherry tomatoes, see recipe
  • 1 Tbsp. fresh basil, minced
  • 1 x clove garlic, chopped

Directions

  3. For The Dressing:Combine the cilantro, thyme, basil, garlic and shallots in a small bowl.
  4. Whisk in the wine and the vinegars.
  5. Add in the extra virgin olive oil and corn oil in a fine stream, whisking constantly.
  6. Season to taste with salt and pepper; set aside.
  7. Cook the pasta in boiling salted water till al dente; drain. Place in a large serving bowl. Toss with the extra virgin olive oil. Set aside till cold.
  8. Stir in the black beans, red and yellow peppers, carrot, tomatillos, cheese, chicken, tomatoes, basil and, garlic. Toss with the dressing.
  9. Adjust the seasonings.
  10. Chill, covered, for 20 min. The salad may he made up to 3 hrs before serving time.
