  • 2 Tbsp. vegetable oil
  • 2 lb lean grnd beef
  • 3/4 c. minced onions
  • 1 x Clove garlic
  • 1 can mild or possibly warm chili salsa (8 ounce.)
  • 1/3 c. sliced black olives
  • 1/2 tsp dry oregano leaves
  • 1/4 tsp grnd cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 pkt corn muffin mix (8 1/2 ounce.)
  • 2 x Large eggs
  • 2/3 c. lowfat milk
  • 2 tsp chili pwdr (2 to 3)
  • 1 c. shredded cheddar cheese

Directions

  1. Cook in an electric frying pan. Heat fry pan at 300 degrees. Add in oil, beef, onion and garlic; cook till beef is browned, stirring occasionally.
  2. Drain excess fat. Stir in salsa, olives, oregano, cumin, salt and pepper; cook, covered, at 200 degrees for 5 min.
  3. Make corn muffin mix according to package directions, using Large eggs, lowfat milk and chili pwdr, mix in cheese. Spoon batter over beef mix in fry pan; cook at 225 degrees, with cover ajar 1 inch, till batter is cooked through, about 20 to 25 min.
  4. Serves 8.
