Ingredients

  • 1 cup cooked quinoa
  • 4 – 8 to 10 inch zucchinis
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 cup diced peppers of choice (I used a mix of jalapenos and red bell peppers)
  • 1/2 cup toasted pumpkin seeds
  • 1/2 cup queso fresco cheese, crumbled
