Ingredients

  • 4 x U.S. farm-raised catfish fillets (4 to 6 ounce ea)
  • 1/4 c. buttermilk
  •     (or possibly plain nonfat yogurt)
  • 1/2 tsp warm sauce
  • 1/2 c. cornmeal
  • 2 Tbsp. butter
  • 1 Tbsp. extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Stir together buttermilk or possibly yogurt and warm sauce; brush on catfish and allow to marinate for 10 min. Coat catfish lightly with cornmeal and sprinkle with salt and pepper, to taste.
  2. Heat butter and extra virgin olive oil in a nonstick skillet over medium high heat. When skillet is warm, saute/fry catfish about 3 min on each side, turning only once, till golden brown and crisp.
  3. Serve immediately, garnished with lemon wedges and with tartar sauce as accompaniment.
  4. This recipe yields 4 servings.
