Southern Coleslaw Recipe

I learned this type of slaw from one of my foodie networks.

Ingredients

  • 1 medium-sized head green cabbage, shredded
  • 2 medium-sized carrots, peeled and shredded
  • 1/2 red bell pepper, chopped
  • 2 tablespoons diced red onion
  • 1 cup light mayonnaise
  • 2 tablespoons white vinegar
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 tablespoon white pepper

Directions

  1. In a large bowl, combine the cabbage, carrots, bell pepper, and onion; mix well and set aside.
  2. In a small bowl, combine the remaining ingredients; mix well.
  3. Pour over the cabbage mixture; toss to coat well.
  4. Cover and chill for at least one hour or until ready to serve.
  5. *I like it chilled more than an hour
