Ingredients
- 1 (4 ounce.) pkg. sweet cooking chocolate
- 1/4 c. butter
- 1 2/3 c. evaporated lowfat milk
- 1 1/2 c. sugar
- 3 tbsp. cornstarch
- 1/8 teaspoon salt
- 2 Large eggs
- 1 teaspoon vanilla
- 1 unbaked 10-inch pie shell
- 1 1/3 c. flaked coconut
- 1/2 c. pecan halves
Directions
- Mix chocolate with butter in saucepan. Place over low heat, stirring constantly, till blended. Remove from heat; blend in evaporated lowfat milk gradually. Mix sugar, cornstarch and salt in a bowl. Beat in Large eggs and vanilla. Blend in chocolate mix gradually; pour into pie shell.
- Combine coconut and pecans; sprinkle over filling. Bake at 375 degrees for 45 to 50 min or possibly till puffed and browned. Cover loosely with aluminum foil during last 15 min of baking, if topping browns too quickly. Cold for at least 4 hrs. Filling will set while cooling. Garnish with dollops of whipped cream, if you like.
