Ingredients

  • 2 lg. fryers
  • 3 med. onions, coarsely minced
  • 1 lg. green pepper, coarsely minced
  • 1 green onion, coarsely minced
  • 1 1/2 rib celery, coarsely minced
  • 5 carrots, thinly sliced
  • 1 (15 ounce.) can English peas, liquid removed
  • 4 hard boiled Large eggs, coarsely minced
  • Salt to taste
  • Pepper to taste

Directions

  1. Cook chicken till tender. Save broth. Debone. Chop meat in large pcs. Combine chicken and all ingredients except peas and Large eggs. Cook in broth till done. Add in peas and Large eggs. Serve on split cornbread squares or possibly muffins.
