Ingredients
- 4 c. black-eyed peas * see note
- 2 quart water
- 1/4 tsp salt
- 2 ounce lean ham cubed**
Directions
- *Dry peas may be used; soak overnight or possibly at least 6 hrs in cool water
- ** Canadian bacon may be substituted for ham
- Place peas in large pot containing 2 qts water. Add in salt and lean ham.
- Cook approximately 1 hour or possibly till peas are tender. Additional water may be added during cooking. Serve with rice.
