Sourdough Surprises~

It's the 20th of the month and that means it's time for Sourdough Surprises! Sourdough Surprises is a monthly challenge, where we are asked to use our sourdough starters to make something delicious. This month our inspiration comes from Sourdough Battered Onion Rings!! We can make a delicious and crispy batter to coat all kinds of yummy fried foods. Our challenge is to Fry Stuff!! Can't get much better than that! Vegetables, fruit, bread, fish, anything goes as long as it is covered in a sourdough batter! Fried twinkie or candy bar anyone!! I just so happened to have frog legs in my freezer, so that's what I decided to "batter"

I found the recipe for the batter on The Fresh Loaf. I change the recipe slightly. The recipe called for using a 1/4 cup seltzer water or soda water and I decided to use beer. I also added 2 t old bay seasoning to the flour instead of using cayenne pepper and garlic powder. The batter turned out wonderful! Light and puffy, with a tangy flavor from the sourdough starter, with a mild beer flavor. I will be definitely be using this batter over and over. Watch out onions, here I come:)

Sourdough Batter~

Mix together well and let sit on counter, covered, for about 3 hours.

Then place in the refrigerator for another 3 hours.

Rinse frog legs and pat dry. Place frog legs in a shallow dish. Add 2 cups buttermilk. Cover. Put in the refrigerator and let marinade for 3-6 hours or overnight.

Heat oil in deep fat-fryer, according to manufacturers directions.

Place 1 cup all-purpose flour in a pie plate, season with 2 t old bay seasoning mix.

Take starter out of refrigerator and whisk in a 1/4 cup beer. Combine well.

Lightly shake frog legs to remove excess buttermilk, dip frog legs into seasoned flour, then dip into batter. Drop frog legs into the hot oil. Fry frog legs in oil until golden brown. 5-8 minutes. Remove legs from oil with slotted spoon and drain on paper towels. Season with salt. Serve with Spicy Cocktail Sauce Enjoy!
