I know i’ve been a little MIA lately, my grandfather passed away so it has been a difficult week. Thanks so much for your patience! Today I’m back with this bowl of goodness! I’m going to be making these for Thanksgiving this year! Sour Cream, Scallion & Bacon Mashed Potatoes! Awesome flavors, period!

I used yukon gold potatoes for these, they are my favorite! Cooked until for tender then mixed with a little vegetable broth, light sour cream, tons of sliced scallions and crisp bacon! Seasoned with salt and pepper to taste and thats it! The sour cream adds a really nice creaminess and a mild tang. The flavor combination with the scallion and crisp salty bacon is really wonderful! Basically these are as awesome as a loaded baked potato {without cheese}!

Sour Cream, Scallion & Bacon Mashed Potatoes

Ingredients

Instructions

Place the quartered potatoes into a large pot of cold water. Bring up to a boil and cook until fork tender. Drain and place the potatoes back in the pot.

Cook the bacon in a pan until crisp, drain and roughly chop.

Add in the vegetable broth and mash until smooth.

Stir in the sour cream, scallions and salt and pepper to taste.

Garnish with additional scallion and bacon if you'd like.
