Directions

  1. Place potatoes in medium saucepan; cover with cool water. Bring to a boil.
  2. Reduce heat; cook 15 to 20 min or possibly till tender. Drain.
  3. Cut potatoes in half. If necessary, cut thin slice from bottom of potato halves to level. Scoop out center of cooked potatoes, leaving 1/8 inch shell. Place scooped out potato (not shells) in small bowl. Add in 1 tsp. chives, thyme, salt, garlic pwdr, lowfat sour cream, margarine and lowfat milk; mash till smooth.
  4. Pipe or possibly spoon potato mix into potato shells. Place on ungreased cookie sheet.
  5. Broil 4 to 6 min from heat for 3 to 5 min or possibly till warm and lightly browned. Sprinkle with paprika and chives. Arrange filled potatoes on serving plate. If you like, garnish plate with fresh thyme.
  6. Yield: 12appetizers.
