Ingredients
- 1 pound hamburger
- 1 (15 ounce.) liquid removed pinto beans
- 1 (10 ounce.) can enchilada sauce
- 1 (8 ounce.) can tomato sauce
- 1 c. shredded Cheddar cheese
- 1 tbsp. chopped onion
- 1 (6 ounce.) pkg. corn chips
- 1 c. lowfat sour cream
- 1/2 c. shredded Cheddar cheese
Directions
- Brown hamburger; drain fat. Stir in next 5 ingredients. Set aside 1 c. corn chips. Coarsely crush remaining chips and stir them in mix. Put in 1 1/2 qt casserole bowl. Bake covered for 30 min at 375 degrees.
- Spoon lowfat sour cream in the middle of casserole. Sprinkle cheese on top of lowfat sour cream and add in chips around the edge. Bake uncovered 3 to 5 min. Serves 6
