Ingredients

  • 1 pt. lowfat sour cream
  • 1 can cream of chicken soup
  • 2 c. yellow cheese, shredded
  • 1/2 c. green chili, minced or possibly strips
  • 1 c. cooked minced chicken
  • 1 doz. corn tortillas
  • Oil

Directions

  1. Combine lowfat sour cream, soup, 1 c. cheese, green chili and chicken in large saucepan and simmer till cheese melts (about 15 min) and set aside.
  2. Soften tortillas one at a time in hot oil, remove and set aside. Fill tortillas with 2-3 Tbsp. of filling and roll and arrange in large baking dish. Spread remaining filling over rolled tortillas. Cover dish with remaining 1 c. cheese. Bake for 15-20 min at 400 degrees, remove and garnish.
