.%20Where%20I%20once%20followed%20the%20recipe%20exactly%20and%20use%20bottled%20Italian%20salad%20dressing%20to%20marinate%20the%20potatoes%20after%20they%20cooked,%20I%20now%20prefer%20to%20whisk%20together%20some%20bacon%20fat%20(oh%20yeah),%20olive%20oil,%20vinegar%20and%20herbs%20from%20the%20garden%20for%20an%20even%20fresher%20(and%20better)%20taste.%20I%20did%20learn%20through%20experimentation%20though%20that%20as%20good%20as%20balsamic%20vinegar%20tastes,%20it%E2%80%99s%20not%20a%20good%20choice.%20Tan%20potato%20salad%20is%20just%20not%20so%20pretty!%20Still%20the%20main%20ingredients%20rule%E2%80%A6some%20egg,%20some%20bacon,%20some%20sour%20cream%20and%20no%20doggone,%20whoever%20decided%20that%20it%20belongs%20there%20anyhow,%20RELISH.%20No.%20None.%20Zip.%20Nada.%20Zilch.%3C/p%3E%3Cp%3EBy%20the%20way%20did%20you%20know%20that%20old%20fashioned%20Pyrex%20bowls%20are%20a%20BIG%20DEAL?%20My%20daughter%20and%20her%20friends%20hold%20swaps,%20yearn%20for%20ones%20they%20see%20on%20Pinterest%20and%20there%20are%20definitely%20bragging%20rights%20if%20you%20score%20a%20set%20like%20you%20see%20in%20this%20post.%20These%20belong%20to%20my%20friend%20Karen%20who%20let%20me%20borrow%20them%20for%20this%20old%20fashioned%20recipe%20that%20is%20still%20my%20favorite%20today.%20Did%20she%20know%20anything%20about%20how%20popular%20they%E2%80%99ve%20become?%20Heck%20no,%20these%20are%20simply%20a%20wedding%20gift%20that%20they%20have%20now%20used%20for%20over%2030%20years!%20Who%20knew?%20Certainly%20not%20Karen.%20Or%20me.%20How%20about%20you?%20Are%20you%20one%20of%20the%20new%20Pyrex%20fanatics?%3C/p%3E%3Cp%3EIt%20seemed%20most%20appropriate%20to%20use%20these%20bowls;%20they%20and%20this%20recipe%20are%20of%20the%20same%20generation%20and%20they%20are%20a%20great%20example%20of%20%E2%80%98What%E2%80%99s%20old%20is%20new%20again.%E2%80%99%20Try%20it%E2%80%A6you%E2%80%99ll%20see,%20it%E2%80%99s%20the%20BEST!!%3C/p%3E%3Cp%3ESour%20Cream%20and%20Bacon%20Potato%20Salad%3C/p%3E%3Cp%3E4%20oz%20olive%20oil%202%20oz%20bacon%20drippings%202%20oz%20cider%20vinegar%20Herbs%20of%20your%20choice%20-%20I%20used%206%20basil%20leaves,%201%20sprig%20of%20fresh%20rosemary%20and%20about%202%20Tbsp%20of%20fresh%20thyme;%20all%20chopped.%20%C2%BD%20tsp%20garlic%20salt%204%20pounds%20small%20Red%20potatoes%204%20large%20eggs,%20hard%20boiled.%20Separate%20yolks%20from%20whites%20and%20chop%20whites.%208%20oz%20bacon,%20cooked%20to%20a%20crisp%20and%20crumbled%20(Be%20sure%20to%20reserve%20some%20bacon%20drippings%20for%20the%20marinade%20above)%20%C2%BD%20bunch%20green%20onion,%20chopped%20%C2%BE%20cup%20mayonnaise%20%C2%BE%20cup%20sour%20cream%20(in%20a%20pinch%20I've%20used%20Greek%20yogurt)%203%20Tbsp%20Dijon%20mustard%20Salt%20and%20Pepper%20for%20seasoning%20Chopped%20green%20onion%20and%20crumbled%20bacon%20(optional)%3C/p%3E%3Cp%3ECombine%20the%20bacon%20fat,%20olive%20oil,%20vinegar,%20herbs%20and%20garlic%20salt%20in%20a%20small%20food%20processor%20or%20shaker%20jar%20and%20combine%20well.%20Season%20with%20pepper%20to%20taste.%20Clean%20(but%20do%20not%20peel)%20the%20potatoes%20and%20cut%20into%201%22%20cubes.%20Immerse%20in%20salted%20water;%20bring%20water%20to%20a%20boil%20and%20boil%20for%207-10%20minutes,%20testing%20potatoes%20to%20see%20if%20they%20are%20done.%20They%20should%20be%20firm%20but%20easily%20penetrated%20with%20a%20fork.%20Remove%20from%20heat,%20drain%20and%20place%20back%20into%20pot.%20Add%20the%20marinade%20and%20stir%20gently%20to%20cover%20all%20of%20the%20potatoes;%20refrigerate%20for%20at%20least%20one-half%20hour.%20Mash%20egg%20yolks%20finely%20with%20a%20fork%20in%20a%20medium%20size%20bowl.%20Make%20the%20dressing%20by%20combining%20the%20yolks%20with%20the%20mayonnaise,%20sour%20cream%20and%20Dijon%20mustard;%20mix%20with%20a%20whisk%20and%20season%20with%20salt%20and%20pepper.%20Add%20dressing,%20chopped%20egg%20whites,%20bacon%20and%20green%20onion%20to%20potatoes%20and%20mix%20gently.%20Taste%20and%20adjust%20seasoning%20with%20salt%20and%20pepper%20if%20necessary.%20Refrigerate%20for%20a%20minimum%20of%20one%20hour%20before%20serving;%20best%20if%20made%20ahead%20and%20refrigerated%20overnight.%20Garnish%20before%20serving%20with%20green%20onion%20and%20bacon%20bits.%20%203.3.3077%3C/p%3E%3Cp%3EIf%20it%E2%80%99s%20Thursday%20it%20must%20be%20time%20for%20the%20Food%20Network%20%23SummerSoiree.%20Today%20it%E2%80%99s%20one%20of%20my%20favorites;%20potato%20salad.%20I%20love%20this%20potato%20salad%20and%20others%20too%20and%20imagine%20I%E2%80%99m%20going%20to%20want%20to%20make%20every%20single%20dish%20on%20this%20list%20from%20our%20other%20contributors.%20Perfect%20time%20of%20year%20and%20enough%20barbecues%20and%20picnics%20I%20bet%20we%20could%20do%20just%20that!%3C/p%3E){kind=link}
