Wow! Thank you to the nearly 50 participants who contributed to my Charity Souper Bowl. Since many of you homecooks contributed more than one recipe, this brings my donation to the ASPCA to a whopping $56.

In addition to my donation, many bloggers personally told me that they’d be making private donations inspired by this event. Thank you, Thank you!

Detailed Roundup

My first round up entry is going to be a little more detailed than the rest, simply because the recipes come from two very special people in my life. And it is my blog. And I do what I want.

The Omnivore and I worry about our pets’ futures just as parents of small children worry about who would take care of their kids if they were to pass unexpectedly.

The thing is, we have high, pretty high, very high standards for pet care. That is simply what works for us. But we need to be sure that those standards are carried on throughout our pet’s life (go ahead and say it, this is getting out of control for 2 dogs and a cat). We are so happy to have friends like Rob and Crista to do that for us. Congratulations R&C! They are truly model pet owners and model friends! They dedicate the first to their very special cat, Gato, and the second, to their ever faithful lab/cocker mix, Movi.

Purchase one can of chicken noodle soup

Pull tab on top to remove lid

Pour contents of can into microwave safe bowl

Place bowl with contents into microwave

Cover with paper towel to prevent microwave splatter

Microwave for 2 minutes (time may vary for desired temperature)

Carefully remove bowl from microwave and dispose of paper towel

Stir contents

Enjoy

Yeah. That’s what I thought, too. Don’t worry. That’s what I thought, too.

They submitted a more legit recipe as well: The snow is not wet enough to make a snowman, but I can still make this beer cheese soup.

2 (10 1/2 oz.) cans condensed cream of chicken soup

1 tsp. Worcestershire sauce

1/4 tsp. seasoned salt

1/4 tsp. paprika

2 (12 oz.) bottles of New Castle Brown Ale

2 cups shredded cheddar cheese

Garnish with bacon bits

1. In a saucepan, mix soup and seasoning. Add beer gradually while stirring. Heat to simmering.

2. Add cheese. Heat slowly, stirring constantly, until cheese is melted.

3. Pour into soup bowls or cups. Garnish with bacon bits.

Lisa at the Tastetastic Voyage makes her donation in honor of Duke. She submitted this soup, Beef Veggie Skillet Soup.

Stephanie at Stephanie’s cooking dedicates her donation to two furry beasts, Gus and Joey. She is also making an additional donation to the ASPCA at the end of this month that was inspired by this event. Go Stephanie! Here is her leek and potato soup and loaded baked potato soup.

Judy must know what she’s talking about because her blog name is “Judy’s Stew.” She submitted a hearty recipe for minestrone. It also looks like it’d feed an entire kennel She dedicates her donation to her companion, Scooby. Thanks Judy!

Lindsey at Our Share of the Harvest specializes in cooking from her CSA. That is such a great and responsible endeavor. Go Lindsay! She submitted a cheesy butternut squash soup recipe that just screams comfort.

She has cats and a dog as pets but she dedicates this soup to her newly adopted dog, Basil. You know he comes from a house with a couple of foodies!

But Holly, Lindsey’s oldest pet, could not be left out of these event. Lindsey made a delicious looking soup in honor of her tiniest pet of all. Check out her curried lentil soup here.

And last but not least, Lindsey made another donation in the form of Tomato Fennel Soup with Shrimp in honor of her cat, Daisy.

Cooking for Carnivores is a blog that I’ve always been a fan of. It is no wonder because she submitted a soup that I know I would just adore (love anything with chickpeas!). She dedicated her donation to a cat, Miss Kitty, that has passed away but will be forever remembered.

But one soup wasn’t enough for this blogger. She also included an entry for a soup that can be adapted to appease a meat lover.

Cathy at Cathy’s Kitchen Journey dedicates her entry to the most wrinkly and snuggly guy of the entire round up: Humphrey. Her butternut potato soup looks healthy and delicious:

Delilah is an “internet friend” of mine. Although we’ve never met in person, I know a lot about her faithful companion, Owen. Delilah does not blog, but she wrote an entry in honor of Owen and her other pet, Rudy.

Easy Chicken Fajita Soup

I found this recipe a few weeks ago when searching for a new soup recipe. This fit the bill being loaded with of veggies and black beans. I love to make a big pot of soup in the could winter months on the weekend, and then have it to take as leftovers for lunch during the week. This soup was even better the second day after the flavors mingled overnight in the fridge.

Ingredients

* 2 tablespoons vegetable oil

* 1 pound skinless, boneless chicken breasts, cut into strips

* 1 (1.27 ounce) packet fajita seasoning

* 1 red bell pepper, cut into thin strips

* 1 green bell pepper, cut into thin strips

* 1 poblano pepper, cut into thin strips

* 1 large onion, cut into thin strips

* 1 (14.5 ounce) can fire roasted diced tomatoes

* 1 (15 ounce) can seasoned black beans

* 1 (14 ounce) can chicken broth

* 1 dash hot sauce

* salt and pepper to taste

* I added cumin, cilantro and chili powder to taste (probably 1/2 tsp. each) to give the soup a little more kick & flavor.

Directions

1. Heat oil in a large soup pot over medium heat. Place chicken in the hot oil; cook, stirring only occasionally, until brown, about 10 minutes. Sprinkle fajita seasoning over the browned chicken and stir well to coat. Add the red and green bell pepper, poblano pepper, and onion to the seasoned chicken. Stir and cook over medium heat until the vegetables are soft, about 10 minutes.

2. Pour the fire roasted tomatoes, black beans, and chicken broth into the pot with the chicken and vegetables. Bring the soup to a boil over high heat, then reduce the heat to medium-low, and simmer uncovered for 30 minutes, stirring occasionally.

3. Season the soup with hot sauce, salt, and pepper to taste before serving.

Note: We sprinkled with a little cheese, but this would be great topped with sour cream, crispy tortilla strips, etc. I served with cheese quesadillas on the side.

Delilah also wished to dedicate a second meal to her childhood pet, Bud.

Hearty Chicken Noodle Soup (adapted from here and here)

Ingredients

Olive Oil

1 Rotisserie chicken cleaned from bones & shressed

1 medium onion cut and diced

3 cloves minced garlic

2 quarts chicken broth

2 bay leaves

2 large carrot, peeled and diced

2 medium rib celery, diced

1/4 teaspoon dried basil and oregano

2 cups (3oz) whole wheat egg noodles

1/4 cup minced fresh parsley leaves

Kosher salt & pepper to taste

Heat olive oil, saute onion, celery, carrots, and garlic until tender. Add chicken broth and spices. Bring to a boil, reduce heat…simmer 30 minutes. Add egg noodles & cook until tender (approx. 15 additional minutes). Remove bay leaves. Add salt & pepper to taste. Serve with crusty bread.

Unfortunately, Inna’s living arrangements keep her from having pets, but that didn’t keep her for submitting a delicious recipe for Zuppa Toscana. She dedicates her entry to all the lonely, homeless pets out there!

I’ve been following (and cooking from) Cara’s Cravings since she started her blog. Trust me: she’s a reliable source of interesting recipes. She made a squash soup that includes one of my favorite ingredients: peanut butter. You better believe I’ll be making this one.

She dedicates this donation to Phoebe, a beagle that has now passed but is very dear to her heart.

The Jey of Cooking is a blog that I’ve recently begun following. I really like the content because the recipes always seem to have an interesting spin. Jey submitted Beer Cheese Soup in honor of her cat for the past 9 years, Dexter. Be on the lookout for a charity blogging event on her site as well!

Erin entered a soup that speaks to my heart: Curried Lentil Soup. She is newly engaged and has started her family off right with the addition of a new puppy, Jesse. Thanks Erin!

Amy at Sing For Your Supper submitted a recipe in honor of her cute, little, hairy black dog, Izzy. She’s a cute pup! The recipe was West African Peanut Stew I’m a sucker for anything with peanut butter.

Josie at Pink Parsley doesn’t have any pets. But that didn’t prevent her from making a donation.

Creative Nirvana Today is a blog that posts about homeschooling and cooking. Italian Onion Soup is the entry submitted to my charity souper bowl from this blogger. She donates in honor of her kitty, Gray.

Kira at Cook, Pray, Love has two cats, one of whom I have followed on twitter. I loved actually seeing a picture of that tweeter Thelonius Monk in Kira’s post. The soup she posted looks amazing. I remember wanting to make it when I first saw it on another blog I follow, Bakin’ and Eggs. Kira’s Curried Coconut Soup with Chickpeas just makes me want to make it sooner. Thanks, Kira, for your donation.

Tasha submitted a vegetarian lentil based soup to the Charity Souper bowl, Caramelized Onion, Lentil, and Carrot soup. On her blog, The Brick Kitchen, she dedicated this soup post to her pet Soma. May she rest in peace. Thanks Tasha!

The WeekDay Gourmet blog posted quite possibly the best picture of the animal that was the subject of a post’s dedication and donation. This donation goes out to Gracie, who loves helping out in the kitchen. This Poblano Shrimp Corn Chowder sounds irresistible. Thanks, WeekDay Gourmet!

Lindsay, a non-blogger, but a Branny-follower, was inspired to create her own Humane Society Donation box after reading about the Charity Souper Bowl. She also submitted a comforting recipe for loaded potato soup in honor of her dog, Bode:

Pierce potatoes with a fork. Microwave on HIGH 13 minutes or until tender. Cut in half; cool slightly.

While potatoes cook, heat oil in a saucepan over medium-high heat. Add onion; saute 3 minutes. Add broth. Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups milk. Bring to a boil SLOWLY. Cook 1 minute. Remove from heat; stir in sour cream, salt, and pepper.

Arrange bacon on a paper towel on a microwave-safe plate. Cover with a paper towel; microwave on HIGH for 4 minutes. Crumble bacon.

Discard potato skins. Coarsely mash potatoes into soup. Top with cheese, green onions, and bacon. Yield: 4 servings (about 1 1/4 cup each).

Caitlin, a brand new blogger, has a daughter who loves her neighbor’s dog. This donation goes out in honor of that special playmate! Caitlin submitted a delicious recipe for Eggplant Soup, originally from Bon Appetit.

Amy submitted her recipe in honor of her miniature dachshund, Jala. She’s 16 and still Amy’s number 1 pal. The recipe from Amy is for Smokey Tomato Soup with Couscous and sounds great.

The bloggers at From Cows to Quinoa have one of my favorite breeds of a dog: a pit bull mix. Their donation is in honor of their dog Ramona and is called Compassion soup. It is vegan and delicious!

Kate pledged a donation in honor of her cat, Kali, who was adopted last year. She and her husband are strong advocates of animal adoption and couldn’t resist participating. Kate’s submission was pasta and bean soup, a hearty recipe filled with veggies, beans and pasta.

I literally laughed out loud when I read Kate’s second submission to the Souper Bowl. Her picture of her pet-of-honor, Rocky, just hit my funny nerve. The soup also looks amazing. Here’s her Creamy Tomato Basil Soup!

One recipe failure didn’t get Kate down in her attempt to submit to the Souper bowl. The second recipe attempt was an amazing success: Roasted Parsnip Soup. Her donation is in honor of her pooch, affectionately known as “Thatdog” on the blog.

Carrie, at Carrie’s Sweet Life, has a loyal dog named Peanut. She seems like a really sweet little mix and fits perfectly into their family. Carrie submitted this soup, Creamy Beef and Mushroom Soup:

Although I don’t have a pit bull, I do believe that is my favorite breed of dog. The adoration they have for their master is untouchable. I better not get started on this topic. Maybe another blog post. A. Rivera’s Kitchen Adventures submitted a Creamy Broccoli and Chicken Soup in honor of their pittie, Lacey. She looks like an adorable buddy. She also submitted a recipe for Tomato Florentine Soup

Finnegan and Fargo (how cute are those names!?) are pets that belong to Adventures Of A Girl and her Apron. This blogger submitted two entries: Potato and Asparagus Soup and Mexican Soup. Yum!

Melissa at I Was Born to Cook submitted a recipe in honor of a beautiful English Bulldog, Vito. Her recipe was right up my alley, too, because it includes one of my favorite ingredients: lentils. Thanks Melissa.

Melissa’s sister doesn’t blog, but that didn’t prevent her from submitting a recipe in honor of Vito as well. Here’s a recipe for Kristen’s favorite soup: Italian Wedding Soup

Meatballs:

1 small onion, grated

1/3 cup chopped fresh Italian parsley

1 large egg

1 teaspoon minced garlic

1 teaspoon salt

1 slice fresh white bread, crust trimmed, bread torn into small pieces

1/2 cup grated Parmesan

8 ounces ground beef

8 ounces ground pork

Freshly ground black pepper

Soup:

12 cups low-sodium chicken broth

1 pound curly endive, coarsely chopped (1 pound of escarole would be a good substitution)

2 large eggs

2 tablespoon freshly grated Parmesan, plus extra for garnish

Salt and freshly ground black pepper

Directions

To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs. Place on a baking sheet.

To make the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and curly endive and simmer until the meatballs are cooked through and the curly endive is tender, about 8 minutes. Whisk the eggs and cheese in a medium bowl to blend. Stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin stands of egg, about 1 minute. Season the soup to taste with salt and pepper.

Ladle the soup into bowls and serve. Finish soup with parmesan cheese if desired.
