  • 1 bag of dried split peas (16 oz)
  • 32 oz low sodium chicken broth
  • 1 envelope of dried onion soup mix
  • Chopped celery (3 ribs)
  • Chopped carrots (1 cup)
  • 2 leeks, white part washed, trimmed & sliced
  • 2 cups of water, or more if needed
  • Cajun seasoning, to taste (Like Slap Yo Mama or Tony’s)
  • 1 T dried parsley
  • 1 t dried dill
  • 1 T garlic, chopped
  • 2 T Grey Poupon mustard
  • Ground black pepper, to taste
