Ingredients
- 4 lbs. (12 med.) potatoes
- 8 ounce. cream cheese, softened
- 1 c. lowfat sour cream
- 2 teaspoon salt
- 1/8 teaspoon pepper
- 1 garlic clove, crushed
- 1/4 c. chives, minced
- 1/2 teaspoon paprika
- 1 tbsp. butter
Directions
- Cook potatoes till tender, drain and mash. Add in next 5 ingredients; beat till smooth and light. Stir in chives.
- Spoon into a lightly greased, shallow 10 c. baking dish. Sprinkle with paprika and dot with butter. Bake at 350 degrees for 30 min, till lightly golden brown and heated through. Yummy.
