Sneaky Zucchini Chicken Nuggets

Ingredients

  • 1 ½ cups Zucchini, grated
  • 450g Minced Chicken
  • 1 egg
  • 1 tsp onion salt
  • 2 cups crushed corn flakes

Directions

  1. Preheat the oven to 200°C. Lightly grease baking tray.
  2. In a large bowl, mix together the zucchini, chicken, egg, and onion salt until well combined.
  3. Form 1-2 tablespoons of the chicken mixture into small balls, then press flat (until about 1/2 inch thick), and coat in cornflakes.
  4. Place nuggets on tray and spray a light layer of nonstick cooking spray over them.
  5. Cook for 13-15 minutes, or just until nuggets have cooked thoroughly.
