Snap Pea Chicken Over Rice Recipe

Ingredients

2 teaspoons coconut oil
3 cloves of garlic, minced
¼ jalapeno pepper, minced {more if you like spicy}
2 Scallions, chopped
1 Tablespoon lemon grass, minced
8 ounces boneless skinless chicken breast cut into strips
6 snap peas, blanched
Juice of ½ Lime or Lemon
½ cup cilantro leafs (without the stems)
1 teaspoon soy sauce
2 tablespoons water
½ teaspoon oyster sauce
½ teaspoon fish sauce
3 teaspoons brown sugar
1 cup Jasmin Rice cooked
Add the coconut oil in frying pan and let it get just a bit warm {not smoky hot},
additional PP for the rice (5 PP per cup)
