Ingredients

  • 1 cup dried beans (i used a mix of red kidney and black) OR 3 cups canned beans
  • 2-3 chipotle peppers in adobo, chopped
  • 1 green pepper, chopped
  • 3 stalks of celery, chopped
  • 1/2 onion, chopped
  • 1 lb ground beef, cooked
  • 1 tbsp taco seasoning
  • 1 24oz can of crushed tomatoes (Red Gold is best)
  • 1 cup corn kernels (frozen or canned is fine)
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 1 tbsp cumin, or more taco seasoning
