  • 8 ounce smoked tuna - (to 12 ounce) broken into chunks
  • 1 piece daikon radish - (4" long) peeled, quartered,
  •     and sliced
  • 1/2 x English cucumber halved, and
  •     thinly sliced
  • 1 med carrot peeled, halved,
  •     and thinly sliced
  • 2 x green onions thinly sliced
  • 1/3 c. rice wine vinegar
  • 1 tsp sesame oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. sesame seeds

Directions

  1. Seafood Alternatives: smoked sturgeon, smoked salmon Combine the tuna, radish, cucumber, carrot and green onions in a large bowl and gently toss to mix.
  2. In a small bowl, combine the rice, wine vinegar, sugar, sesame oil, salt and pepper and stir to mix till the sugar has dissolved.
  3. Pour the dressing over the tuna mix and toss gently to coat. Sprinkle the sesame seeds over and serve.
  4. This recipe yields 4 servings.
