Ingredients
- 1 lrg smoked chicken, broken up
- Â Â lettuce leaves
- 6 x green onions, sliced diagonally
- 1 x 125 gram long bean sprouts
- 2 stalk celery, sliced diagonally
- 2 Tbsp. finely minced parsley
- 2 Tbsp. finely minced chives
- 1/4 c. vinaigrette dressing
- 300 gm fresh apricots, halved and deseeded
- 2 Tbsp. slivered almonds, toasted
Directions
- 1. Arrange lettuce leaves on serving platter.
- 2. Combine green onions, bean sprouts, celery, parsley and chives in a bowl.
- Pour over the dressing and toss to coat.
- 3. Place salad in a pile into the centre of the platter. Arrange apricots and chicken on the outside. Sprinkle over the almonds.
