Ingredients

  • For the salmon:
  • 1 side of salmon (about 2 lbs), skin-off and pin bones removed
  • Kosher or sea salt
  • Freshly ground black pepper
  • 1 large shallot, finely chopped
  • ¼ cup chopped flat leaf parsley
  • Zest from 1 lemon
  • 2 tablespoons extra virgin olive oil
  • For the Cucumber-Dill Sauce:
  • 1 cup 2% Greek Yogurt
  • 2 small Persian cucumbers, peeled and finely diced
  • ¼ cup chopped fresh dill
  • 1 garlic clove, minced
  • 2 teaspoons extra virgin olive oil
  • Juice from about 2 lemons
  • Kosher salt
  • Freshly ground black pepper
