Ingredients

  • 12.5 oz / 354 g pork loin chops (4)
  • 1/2 tsp. each salt and black pepper
  • 1 Tbsp. canola oil
  • 1/2 red onion, chopped
  • 2 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 tsp. fennel seeds, crushed (or use 1/2 tsp. ground fennel)
  • 1/2 cup sodium-reduced chicken stock
  • 2 1/2 cups (23 oz / 660 ml) bottled strained tomatoes
  • 1 Tbsp. sodium-reduced soy sauce
  • 1/2 tsp. dried oregano
  • 1/2 cup canned black beans, drained and rinsed
  • 1/4 cup chopped fresh parsley
